Sautéed Spinach, Mushrooms with Garlic

Need a quick, heathy side dish, Sautéed Spinach, Mushrooms with Garlic is delicious and pairs well with fish, pork, beef or poultry.

Sautéed Spinach, Mushrooms with Garlic

Sautéed Spinach and Mushrooms with Garlic is one of those dishes that you really can wing. Basically, you need some minced garlic, a bag of spinach or better yet if you can get some fresh from your garden or farmers market and some slice mushrooms. I made this with my Blackened Pork Loin Filets and easily had dinner done in 30 minutes. I love easy sides that are loaded with heathy vegetables and good fats.

How many Servings?

The spinach really wilts down, in my house this is a 2- person side dish.

Ingredients Needed

  • Fresh Spinach-1 8oz bag
  • Fresh Sliced White Mushrooms-8oz
  • 4 large Garlic Cloves
  • 1 Tablespoon Bacon Fat or preferred cooking oil.
  • Lemon Fresh is best, but you can use 1 teaspoon of bottle Lemon juice.
  • Sea Salt
  • Black Pepper

Cooking Instructions

  1. Heat your bacon fat of oil of choice in a skillet, I used a 16- inch skillet.
  2. When the skillet is good and hot, add the mushroom slices in a single layer and cook for 2-3 minutes. Add a sprinkle of sea salt. You want to brown the mushroom slices, not steam them. Flip the slices over and brown for a couple minutes.
  3. Turn your heat down to medium low. If the pan is dry, add a bit more cooking fat.
  4. Add the minced garlic and heat for 30 seconds.
  5. Now add the half the bag of spinach and squeeze 1/2 of the lemon over the spinach. Put a lid on and steam the spinach for 30 seconds just to wilt the spinach. Remove lid, give a quick stir and add the rest of the spinach. Squeeze the other half of the lemon over the spinach and mushrooms and a sprinkle of salt and black pepper. Put the lid on and steam for 30- seconds.
  6. Stir, season more if need with black pepper and salt and serve immediately.
What to serve this side dish with?

We made this recipe with the Blackened Pork Loin Filet which was a perfect balance with the blackened seasoning.

I like to serve this with fish, pork or chicken dinner. This recipe also serves well as a bed of goodness to serve fish or scallops on. I often make this as a second side and skip a salad.

Storing left over sautéed spinach, mushrooms and garlic.

Cool leftovers and stored up to 3 days in an airtight storage container. Can be frozen for up to 3 months.
