Description

Bacon, Potato, Cheese Egg Casserole is a perfect casserole to whip up and store overnight in the refrigerator. Everything is mixed together, stored unbaked and then baked fresh the next morning for a breakfast that ready in less than an hour. Therefore, leaves time to make the coffee and chat.


Ingredients

1 lb. bacon, bake in the oven Perfect Sheet Pan Oven Bacon or fry in a heavy bottom skillet, remove bacon from the pan and place on a paper towel lined plate. Do a rough chop and reserve 3/4 cup of the bacon and set aside.

1 yellow onion diced

1 red bell pepper seeds removed and diced

3 cloves garlic minced

12 large eggs

1 cup milk

3 cups frozen diced potatoes, add frozen, let keep it simple

2 cups shredded cheddar cheese, reserve 1/2 cup for the top and set aside.

1 1/2 teaspoons salt

1/2 teaspoon black pepper

2 green onions chopped


Instructions

1. Heat the skillet to medium high and fry the bacon. Transfer the cooked bacon to a paper towel lined plate to drain the excess grease off the bacon.

2 Get out the medium size mixing bowl and crack a dozen eggs into the bowl and add the milk. Using a whip or fork whisk the eggs and milk together.

3. Stir in the rest of the ingredients.  Reserving the 1/2 cup of cheese.

4. Spray a 9 X 13 casserole pan with a good nonstick cooking spray. Pour the egg mixture into the casserole pan. If baking now, preheat the oven to 350 degrees F. If baking the next morning, seal the casserole pan with cling wrap and refrigerate up to 24 hours.

Baking Directions, Preheat oven to 350 degrees F.

Once the oven is up to temperature, place the oven proof casserole pan into the oven and set the timer to 20 minutes. After 20 minutes take the egg casserole out of the oven and sprinkle the reserved bacon and cheese over the egg mixture. Return the casserole to the oven and cook another 20 to 30 minutes. Casserole is done when the egg mixture is nice and browned and set up in the middle of the pan.
