  1. Prepare the Chicken:
    • Remove giblets from the cavity.
    • Rinse the chicken under cold water and pat it dry with paper towels.

  3. Wash the vegetable well and cut in large pieces as they will be strain out. I leave the onion peels on and just cut the roots section off and quarter. the onion skins give the broth coloring and flavor.
    • Place the chicken in a large pot and all the cut up vegetables add enough water to cover it. I generally use 8 quarts of water for a 4 lbs chicken in my stock pot. The size of the pot will have an effect on how much water.

Dried thyme, sage, garlic powder, parsley or bay leaves are all nice herbs to use that compliment chicken broth. This is personally season to taste and I would suggest to start out with a small amount and re-season as needed at the end of the cooking time.
    • Bring the water to a boil and then reduce the heat to a simmer.

    • Skim off any foam or impurities that rise to the surface during cooking.

    • Pierce the thickest part of the chicken with a meat thermometer. If the temperature is 165°F (74°C), the chicken is ready.
  6. Shred the Chicken:
    • Carefully remove the chicken from the pot and let it cool slightly.
    • Shred the meat using two forks.
    • Now skim out all the vegetables and strain the broth though a cheese cloth.

Storage of Freshly Made Chicken Stock

Store for up to 3 days in the refrigerator. Also if you have no plans for the broth within 3 day just pre measure the broth into freezer bags to use withing the next 3 months. I freeze mine in 1 cup, 2 cups and 4 cups pre measured bags. The bags have the amount and date made written on the freezer bag. Then freeze the bags flat on a cooking sheet. The next day I remove the tray and my bags of stock store nicely in the freezer.
